This Citrus Herb Salmon with Crispy White Beans is one of our favorite elevated-but-easy dinners featuring Kosterina Greek Herb & Lemon Olive Oil. It’s fresh, flavorful, packed with protein, and comes together in about 30 minutes.
Perfect for a weeknight dinner that still feels special.
INGREDIENTS
• 2 salmon fillets (6 oz each)
• 2 tbsp Kosterina Greek Herb & Lemon Olive Oil
• 1 tsp Dijon mustard
• 1 garlic clove, minced
• 1 (15 oz) can cannellini beans, drained and rinsed
• Zest of 1 lemon
• 2 tbsp fresh dill or parsley, chopped
• Sea salt, to taste
• Cracked black pepper, to taste
DIRECTIONS

Prepare the salmon
Pat salmon fillets dry with a paper towel. In a small bowl, mix together olive oil, Dijon mustard, garlic, salt, and pepper. Brush evenly over the salmon. -
Roast
Preheat oven to 425°F. Place salmon on a lined baking sheet and roast for 10–12 minutes, or until salmon flakes easily with a fork. -
Crisp the beans
While salmon roasts, heat 1 tbsp olive oil in a skillet over medium heat. Add the drained beans and sauté for 8–10 minutes, stirring occasionally, until golden and crisp. Season with salt, pepper, and a squeeze of lemon juice. -
Finish & serve
Plate the salmon over the crispy beans. Top with lemon zest, fresh herbs, and an extra drizzle of Kosterina Greek Herb & Lemon Olive Oil.
Chef’s Tip: Add crumbled feta or thinly sliced red onion for an extra layer of flavor.
